Salt & Pepper Chips
Ingredients
For the seasoning:
2 tsp garlic powder
1 tsp onion powder
¾ tsp salt
¼ tsp white pepper
¾ tsp sugar
¼ tsp five spice powder
¼ tsp curry powder
1 tsp chilli flakes
For the chips:
1 litre canola oil, for frying
600g straight-cut chips
½ capsicum, thinly sliced
2 Spring onions, roughly chopped
1 chilli, thinly sliced
1 tbsp garlic, finely chopped
1 tbsp Chinese cooking wine, optional
Method
1. Make the seasoning
Combine the garlic powder, onion powder, salt, white pepper, sugar, five spice powder, curry powder and chilli flakes in a small bowl. Mix well and set aside.
2. Fry the chips
Add the oil to a large wok or heavy-based pot and heat to 180°C. Carefully add the chips and fry for 3–5 minutes, or until golden and crisp. Remove the chips from the oil and drain on a wire rack.
3. Stir-fry the aromatics
Carefully remove the frying oil from the wok, or use a clean large frying pan. Add 1 tbsp of oil and place over high heat. Add the capsicum, spring onions, chilli and garlic. Stir-fry for 1–2 minutes, or until fragrant and slightly softened.
4. Toss the chips
Add the fried chips to the wok and toss to combine with the aromatics. Add the Chinese cooking wine, if using, and toss quickly so it evaporates.
5. Season and serve
Sprinkle over the seasoning mix and toss again until the chips are evenly coated. Transfer to a serving plate and serve immediately.
