Chocolate Crepe Roll

Soft chocolate crepes, fresh banana, a creamy filling and peanut butter you simply can’t resist. These are the sweet little rolls you usually see in cafes or sushi bars, but now you can make them at home. Fun, pretty and dangerously easy to eat.

Ingredients

Chocolate Crepes:
1 cup plain flour
2 tbsp cocoa powder
2 tbsp sugar
2 eggs
1 ¼ cups milk
1 tbsp melted butter
1 tsp vanilla extract
Pinch of salt

Filling:
1 cup thickened cream
2 tbsp icing sugar
1 tsp vanilla extract
8 bananas

To Serve:
Melted chocolate
Chopped nuts
Peanut Butter

METHOD

1. Make the crepe batter

Whisk flour, cocoa powder, sugar and salt in a bowl. Add eggs, milk, melted butter and vanilla, then whisk until smooth. Rest the batter for 10 minutes.

2. Cook the crepes

Heat a non-stick pan over medium heat. Lightly grease, then pour in a thin layer of batter. Cook for 1–2 minutes, flip and cook for another 30 seconds. Repeat with remaining batter.

3. Whip the cream

Whip cream, icing sugar and vanilla until soft peaks form.

4. Fill and roll

Lay one crepe flat. Spread with whipped cream, add sliced fruit, then roll up tightly.

5. Serve

Drizzle with melted chocolate, peanut butter and top with chopped nuts.
