Crispy Mortadella Sandwich with Pesto and Stracciatella


Warm, crisp-edged mortadella, creamy stracciatella and fresh pesto come together in this simple sandwich that feels just a little special. It’s quick enough for lunch, but just as good when you’re putting something easy on the table for friends.

Ingredients


2 cups fresh basil leaves
½ cup pine nuts
2 garlic cloves
½ cup freshly grated parmesan cheese
½ cup extra virgin olive oil
Salt
Freshly ground black pepper
200 g mortadella, sliced
40 g butter
Oregano
2 pieces crusty bread or sandwich rolls
250 g stracciatella cheese

Method


1. Prepare the Pesto Sauce

In a food processor, combine the basil leaves, pine nuts and garlic.

Pulse until roughly chopped, then add the parmesan and pulse again. With the motor running, slowly pour in the olive oil until smooth.

Season with salt and freshly ground black pepper and set aside.




2. Prepare the mortadella skewers

Fold or cut the mortadella slices into bite-sized pieces and thread onto skewers. You can put 2-3 pieces on each skewer, depending on their size.

In a large pan, melt the butter over medium-high heat and then add fresh oregano.

Place the skewers in the hot pan and cook for 2-3 minutes per side until golden brown and lightly crispy then remove the skewers from the pan.



3.Toast and Serve

In the same pan, add a little more butter and toast the bread until lightly golden and crispy, allowing the bread to soak up the butter.

Spread the stracciatella over the toasted bread. Add the warm mortadella, then spoon over the pesto.

Close the sandwich, slice if desired and serve immediately.
