One-Pan Blueberry Cobbler

One-Pan Blueberry Cobbler

This one-pan blueberry cobbler is warm, jammy and wonderfully rustic. The blueberries burst beneath a soft, buttery cobbler topping, with brown sugar and lemon zest adding sweetness and brightness. Everything is mixed and baked in the MAKO Mini Sear Pan, giving you beautifully golden edges, an impressive stovetop-to-table presentation and less washing up.

Ingredients

For the Cobbler Mix

  • 60 g unsalted butter
  • 125 g self-raising flour
  • 75 g caster sugar
  • Pinch of salt
  • 120 ml milk
  • 1 tsp vanilla extract
  • For the Blueberries
  • 250 g fresh blueberries, divided
  • 2 tbsp light brown sugar
  • Finely grated zest of ½ lemon
  • To Serve
  • Vanilla ice cream
  • Flaky sea salt

METHOD

1. Preheat the Oven

Preheat the oven to 180°C conventional or 160°C fan.

2. Make the Cobbler Mix

Place the butter in the MAKO Mini Sear Pan and melt over low heat until bubbling.

Add the self-raising flour, caster sugar, salt, milk and vanilla. Stir loosely until just combined, then turn off the heat. Don’t worry about a few lumps. They help give the cobbler its rustic texture.

3. Add the Blueberries

Gently stir three-quarters of the blueberries through the cobbler mixture. Scatter the remaining blueberries over the top, followed by the brown sugar and lemon zest.

4. Bake Until Golden

Transfer the MAKO Mini Sear Pan to the oven and bake for approximately 35 minutes, or until golden on top and cooked through in the centre.

5. Serve

Allow the cobbler to cool for a few minutes. Top with vanilla ice cream and a small pinch of flaky sea salt, then serve directly from the pan.
