INGREDIENTS

4 boneless chicken breast fillets
sea salt
freshly ground black pepper
1 cup plain (all-purpose) flour
2 tbsp olive oil
50g (1.7 oz) unsalted butter
400g (14 oz) mushrooms, sliced
4 garlic cloves, finely chopped
2 sprigs of thyme

1 cup (250ml/8.75 fl oz) cream
finely grated zest of 1 lemon
