7. Toast the rice
Add the rice and cook, stirring constantly, for 1-2 minutes, until the grains are lightly toasted and their edges begin to look translucent.
8. Add the wine
Pour in the white wine and continue stirring until it has almost completely evaporated.
9. Cook the risotto
Add the warm prawn stock one ladleful at a time, stirring regularly and allowing each addition to be mostly absorbed before adding the next. Continue for approximately 16-18 minutes, or until the rice is creamy and al dente. The risotto should be slightly looser than your desired consistency, as it will continue to thicken as it rests.
10. Sear the prawns
While the risotto is cooking, heat a drizzle of olive oil in a separate frying pan over high heat. Season the prawn meat with salt and pepper, then sear for 1-2 minutes on each side, or until golden and just cooked through. Remove from the heat.
11. Finish with butter
Take the risotto off the heat. Add the remaining 50g of butter and stir vigorously until the butter has emulsified into the rice and the risotto is glossy and creamy. Season to taste with salt and pepper.
12. Garnish and serve
Divide the risotto among serving plates and arrange the seared prawns on top. Finish with fresh thyme leaves, a drizzle of olive oil grated cheese and a little extra black pepper. Serve immediately.
