

Shredded Chicken Soup
Looking for a bowl of pure comfort? This shredded chicken soup is everything you want when the weather cools down. It is warm, nourishing and packed with flavour from the tender chicken, sweet potato and fresh herbs.
You only need one pot and around 30 minutes to bring this soothing soup to life, making it a perfect fuss-free dinner option. Whether you are feeling under the weather or just want something wholesome and satisfying, this recipe is one to keep on repeat.

INGREDIENTS
350g cooked chicken, shredded
1 medium sweet potato, cut into wedges
2 large onions, cut into bite-sized pieces
1 large carrot, cut into bite-sized pieces
A handful of green beans, cut into bite-sized pieces
A bunch of parsley, roughly chopped
1 bouquet garni (a few sprigs of thyme, rosemary, sage and parsley stems tied together)
6 cups chicken stock
Salt and freshly ground black pepper, to taste
METHOD
Place your MAKO Genius 5-Ply 24cm Stock Pot over medium heat. Pour in the chicken stock, add the sweet potato and carrot. Bring to a boil, then reduce the heat to a gentle simmer. Cook for 10 minutes or until the sweet potato starts to soften.
Add the onions, green beans, shredded chicken, chopped parsley and the bouquet garni to the pot.
Simmer everything for a further 15 minutes, allowing the flavours to develop and the vegetables to cook through.
Remove the bouquet garni from the soup and discard. Taste the soup and season with salt and freshly ground black pepper.
Ladle the soup into bowls and serve hot. It is perfect on its own or with some crusty bread on the side.
